  • 2 cups of amaranth;
  • 3 leeks;
  • 1 cup of red lentils;
  • 2 potatoes;
  • a clove of garlic;
  • 4 tablespoons of extra virgin olive oil;
  • salt to taste.

First, the amaranth is washed, then a pot is heated with a few cups of water and a pinch of salt. Let’s start cooking the amaranth with the lentils.

In the meantime, check that the water is boiling and after a quarter of an hour we also throw the chopped leeks. Immediately after we add the chopped potatoes and garlic.

We wait about 30 minutes before turning off the heat, stirring infrequently. Let it rest for a while with the lid on, then we can finally serve the soup seasoned with a drop of extra virgin olive oil.
