Crown stuffed with chicken, spinach and cheese

Ingredients for 4 people:

– 360 g whole wheat pizza dough

– 1 tablespoon olive oil

– 4 cloves of minced garlic

– 240 g of fresh spinach

– 250 g of semi-creamed ricotta

– 30 g of grated Parmesan cheese

– 180 g of shredded grilled chicken (breast)

Leave the pizza dough at room temperature for about 15 minutes. Preheat the oven to 250ºC.

Heat a large skillet over medium / low heat. Add the oil and garlic, and cook, stirring occasionally, until the garlic is golden brown (2 to 4 minutes).

Put the oil in a bowl and leave the garlic in the pan. Add the spinach and cook over medium / high heat for about 2 minutes, stirring, until the spinach is soft. Let cool for about 10 minutes.

In a medium bowl, mix the ricotta and Parmesan cheese; add the spinach and shredded chicken, mixing very well.

Place the dough on parchment paper and knead it into a 50×6 centimeter rectangle. Place the chicken mixture starting from the center of the dough and make a band of about 50×3 centimeters.

With a pizza cutter, make incisions in the dough on both sides of the filling. Starting at the edge of the dough, make diagonal cuts every 1.5 centimeters approximately. Fold the strips over the filling and seal them together. Very carefully shape the strip into a crown and seal the ends.

Transfer the crown with the parchment paper to an aluminum plate and dust the edges of the paper to fit the measurements on the plate. With a brush, pass half the oil in which the garlic rested.

Cook the crown at 250ºC until the dough is golden, about 18 minutes. Remove from the oven, brush again with the rest of the garlic oil and let it rest for 5 minutes before serving.
