Green beans remind us that things that are good for health can also be good. Of course, we must necessarily know how to enhance them in the kitchen and how to cook them best. Many prepare green beans as a component of salads, others instead pass them quickly in the pan.
Instead, we at ProiezionidiBorsa would like to offer the reader a particular version of green beans. In fact, hardly anyone cooks green beans like this but you miss out on a gourmet dish
- 400 grams of green beans;
- 2 shallots;
- tomato puree;
- 2 potatoes;
- extra virgin olive oil;
- marjoram and thyme;
- salt and pepper.
First we must make sure that we have washed the green beans well. We can take a colander and fill it with green beans. We pass them under very cold water and begin to cut the tips.
We can use this method to clean them quickly, but in any case the important thing is to spread them all on an absorbent cloth. We absolutely must not start making them too wet, because otherwise they would lose consistency. In the meantime, we peel our potatoes and wash them. For this preparation we can simply cut them into just four parts, even roughly.
Hardly anyone cooks green beans like this but you miss out on a gourmet dish
We take a very large pot and fill it with cold water. We light the fire and wait for it to start boiling. We pour a handful of salt and then our cleaned green beans and potatoes. The cooking time here is quite long, we are talking about at least 30 or 40 minutes of boiling. In fact, the longer we cook these ingredients, the better the recipe will be. Anyway, while the potatoes and green beans are cooking, we cut them shallots very finely.
Drizzle of oil in a non-stick pan and fry them a little. At this point we add the tomato puree with a generous glass of water. We put the lid on and turn from time to time. Now, let’s check the consistency of the green beans and potatoes: if they break easily they are ready.
We drain them and quickly pass them in the tomato sauce we created in the pan. After a few minutes, we take everything and pass it in the mixer. We add a drizzle of raw oil accompanied by our aromatic herbs. We serve in soup plates, the dish is ready.
