Cost of goods and staff make up 80 percent of the price. Stefan Köb, gastronomy entrepreneur and deputy chairman of the specialist group, was a guest at “Vorarlberg LIVE” on Wednesday.

IHS scientist Klaus Neusser spoke to ORF about the fact that inflation rates in Austria would be significantly higher than those in Germany and the euro zone, also because of gastronomy. The shopping basket weighting in the consumer price index (CPI) for restaurant expenses is “much lower” in the German neighbors than here and the gastro price increases in Austria are therefore “much higher,” said Neusser on Tuesday in the Ö1 “Morgenjournal”.

Visiting inns in Austria weighted more heavily than in Germany

In “Vorarlberg LIVE” the deputy gastro specialist group chairman Stefan Köb commented on this. Because according to Neusser, gastro prices in Austria would rise significantly due to “relatively well-running” tourism, fewer restaurants due to staff shortages and fewer inns in the country.

At the event on the top 100 employers in Vorarlberg, Finance Minister Magnus Brunner allowed himself a somewhat humorous objection when asked about the high inflation. He recently had to learn that the Austrian household runs out more often than its German counterpart. In fact, going to a restaurant in Austria is weighted slightly more than in Germany when calculating inflation.

So the gastronomy with a price increase of 13 percent in one year as a price driver in Austria? “I don’t think it’s quite right to put that on the scales and compare it 1:1,” emphasizes host and vice-chairman of the department Stefan Köb. Here, the strength of tourism in Austria, the lack of labor in the industry and in general, and the price increase in purchasing play their role.

Cooks in particular are in short supply, and personnel costs now make up more than 40 percent of prices. This is reflected in the bill.
