Peruvian ceviche is proclaimed intangible cultural heritage of humanity

LIMA.- The Unesco declared today -December 6- Peruvian ceviche, the very ancient and varied dish of marinated fish, as patrimony immaterial of the humanity.

“New inscription on the List of Intangible Heritage: Practices and meanings associated with the preparation and consumption of ceviche, an expression of traditional Peruvian cuisine,” said the United Nations Educational, Scientific and Cultural Organization (UNESCO) in the social network X (formerly Twitter).

The organization announced the decision during the session of the Intergovernmental Committee for the Safeguarding of the Intangible Cultural Heritage that has been held since Monday in the city of Kasane, in northern Botswana, Africa.

The Peruvian government celebrated the validation of its proposal.

“This inscription is the first of an element of traditional Peruvian cuisine and recognizes all the people involved in the value chain of this dish, including artisanal fishermen from the coast, the Andes and the Amazon, farmers and cooks. and cooks,” highlighted the Peruvian Ministry of Culture in a statement.

Ceviche is a dish revered as a central element of Peruvian gastronomy. It is prepared on the coast with sea species, in the mountains with trout from rivers and lakes, and in the jungle with paiche or tilapia raised in lagoons.

Each region uses different ingredients to accompany the dish that give it its own local identity.

Local anthropologists maintain that ceviche (or cebiche) began to be consumed by ancient Peruvians almost 2,000 years ago.

There are at least 1,000 recipes or ways to prepare it in Peru, according to the renowned chef Javier Vargas, president of the Association of Marine and Related Restorers of Peru.
