That’s what they told me at Mistura when I told them that in 1996 I started selling cebiche in my red van. Before the pandemic I bought another similar car, but since they closed everything I had to sell it and I was left with only the first one. I have refurbished it and it is almost ready to return to the ring… It will be the rebirth of the ‘Red Combi’, you’ll see (laughs).

Sure, this bar was designed by my son, he is very creative. He was inspired by pirates and even he said to me: ‘Dad, why don’t you sell dressed as a pirate?’ I liked the idea and we did it. He took it upon himself to look for the eyepatch, the hat, and the saber.

I opened a cevichería on Los Órganos beach (Piura) in 1985. I didn’t cook there, but I was very curious and wanted to learn. That’s how I was grabbing the good seasoning and now I myself am. I have a helper, but the customers want me to prepare and serve (laughs).

Who does the shopping?

I get up early and go to the fishing terminal because all my products are fresh.

What do you think is your secret to success?

My seasoning and charisma. In addition, I always have topics of conversation and I know how to listen, many people want to tell their things and free themselves up a bit.

Do you plan on opening a store in the future?

I opened a cebichera bar on Avenida Colonial, but due to Metro works they closed the entire area and I also closed because no customers came in. Sometimes I think it was for the best because soon after the pandemic started. I would like to try again with a restaurant, but on Los Órganos beach (Piura), at sea everything is calmer, I would retire there.
