Beans are one of the most traditional foods in Brazilian cuisine. It is rich in fiber, protein, minerals and vitamins. However, despite the numerous benefits, there are some myths about food.

According to food engineer Ana Rachel, director of operations at the Combrasil food factory, some of these misconceptions are driving Brazilians away from this very traditional dish.

“Beans are the most plural, democratic and complete food and every Brazilian needs to have them in their diet. All you need is a shell of the grain for you to have access to the benefits, it is the recommended daily amount”, highlights Ana Rachel.

Fattening beans?

Myth. Beans are not fattening. “Beans don’t make you gain weight. In fact, due to its high content of soluble fibers and the high source of protein, this starch makes you lose weight and not gain it”, says Ana.

Beans are only rich in iron?

Lie. Beans are much more than rich in iron. It also contains: 1) fiber, which fights constipation and aids in bowel movement; 2) minerals and vitamins, which help prevent diseases such as diabetes and anemia, and 3) antioxidants, which help fight cell aging.

Can beans be part of diets?

True. Beans can be present in any type of diet. The legume combined with rice is an excellent source of nutrients. The human body needs 20 amino acids to keep health in balance and function properly, ten of which are found in rice and beans.

Do I need to soak the beans?

True. Before cooking it, it is important to soak the beans for eight to 12 hours to eliminate substances that impair the absorption of nutrients. It is also recommended to soak it to remove possible agrotoxic toxins.

Does the production process and choice of grains impact nutrients?

Yes. “The selection of grains is essential to obtain a healthy product, as it is necessary to remove the defective grains and leave only the healthy ones, which are classified as type 1 bean grains, according to the legislation”, explains the food engineer.
