It is one of the jewels of northern gastronomy: fries. Only, since the beginning of the war in Ukraine, the price of oil has soared. Didier Tourlos, manager of a chip shop, deplores “30% increase”. And for good reason, Ukraine is the leading producer of sunflower oil. Added to this is the rise in energy prices. As a result, everything has increased: meats, sauces and even packaging. In order to compensate for these increases, chip shops are working more. Thus, the fries stand now remains open continuously to build customer loyalty.

A price increase

The competition is tough. Lille (Nord) has around a hundred chip shops. Aurèle Mestré opened her establishment barely six months ago. But faced with rising costs, the manager quickly took a drastic decision. “We are raising prices and we hope that prices will come down one day”, he explains. This increase seems rather accepted by customers. “Fries are worth the effort and sacrifice”, assures one of them. Efforts to continue to succumb to the pleasure of a perfectly golden fried potato.
