A small Algerian restaurant recently opened is making a lot of noise in the French culinary press. The “Mama Nissa” is an establishment where celebrates Algerian cuisineand from all angles. Hanane Abdelli-Tancredethe owner, was inspired by her mother’s cookbook “Anissa” to create a universe where Algerian culture reigns supreme.

Nestled in the heart of Paris, in the 2nd arrondissement, the restaurant of Hanane enjoys an ideal location. Not too engulfed in the busy streets of Paris, but not in an area that is too isolated either. Located on Mandar Street, the restaurant looks great with its duck blue storefront and modern decor.

But this very inspiration new-age should not fool you, the dishes served are all taken from the Algerian traditional culinary heritage. And more particularly a book of recipes, bequeathed by the mother of Hanane. Over the days, the latter thus gives life to the recipes listed in the old book.

The concept of the restaurant comes to Hanane one day, when his mother asks him to learn Algerian recipes to teach them to his children later. The famous book on which is based Hanane for his menus is a wedding gift, given to his parents in Algeria in the 1970s.

We thus find a plethora of Algerian dishes on the menu: from chorba, de cokes (short pastry turnovers)from zlablia and tajines of all kinds (Starch Hello, Starch Qarnoun…)… And it must be said that these dishes are successful: Mama Nissa is ranked in the top 10 of the best restaurants in delivery in Paris in 2023.

Mother Nissa: Algerian cuisine with a twist healthy

If she is passionate about Algerian gastronomy, Hanane is nevertheless a fervent adorer of healthy cooking, or ” healthy ». She decides to combine the two to create harmonious blends between strong oriental flavors and balanced dishes.

Son « Couscous Kabyle healthy ” made a lot of talk about him in particular. Hanane replace wheat semolina with barley semolina, which has a lower glycemic index. She also incorporates several vegetables into the preparation, as is Kabyle tradition. Mama Nissa also offers a different version: the classic Mesfouf with broad beans.
