One of the most loved ingredients on New Year’s Eve is certainly le lentils. These legumes are exceptional as an accompaniment to cotechino, but also in a delicious pasta. Yet, one of the ways in which they are most often cooked would be stewed. There will be so many occasions when we have prepared them so that maybe we will have enough. To change recipethere will be nothing better than a delicious and piping hot one homemade soup. Not the usual one, but a delicious and very easy variant that we won’t be able to give up anymore.

Let’s say enough with the usual stewed lentils and let’s prepare this very easy dish!

Let’s see right away ingredients to cook 4 portions of our soup:

  • 400 g of lentils;
  • 1.5 l of vegetable broth;
  • 50 g of raw ham;
  • 5 tablespoons of olive oil;
  • 1 teaspoon of cumin seeds;
  • 1 lemon;
  • 1 carrot;
  • 1 onion;
  • a bay leaf;
  • salt and pepper.

Let’s start the preparation by washing the vegetables well. Then we scrape the carrot and we clean the onion. We put two thirds of the lemon zest in a mixer with vegetables and let’s whisk all together. Let’s continue cutting the ham into small pieces. We throw this and the vegetable mix in a saucepan, then add 3 tablespoons of oil, cumin and bay leaf. We fry on a slow fire until the vegetables have reached the desired browning. Meanwhile, let’s start washing the lentils. After draining them we add them to the pan and pour the hot broth.

We continue cooking for another hour over medium heat, with the lid on. Every now and then let’s remember to mix and possibly add some broth. At the end of cooking we can turn off the stove and flavor everything with a pinch of salt.
