Mexico City.- Oaxaca cheese, whose regional name is quesillo, was chosen among the most valued cheeses, according to the world atlas of traditional dishes, local ingredients and authentic restaurants.

The encyclopedia of flavors known as TasteAtlas ranked Parmesan cheese first, followed by spicy gorgonzola, burrata, grana padano and Stracchino di crecenza.

Although the quesillo was initially located in fifth position, it dropped to number 18 in the list of cheeses as it is a valuation given by users from all over the world.

According to the TasteAtlas review, the Oaxacan product is a semi-soft white cheese made from cow’s milk.

This traditional food is characterized by its fibrous texture and a creamy, smooth, but buttery flavor, ideal for quesadillas, empanadas and tlayudas.

Portal highlights quesillo for its excellent melting properties, which is why it is often used in baked dishes.

It also indicates that the cheese bears the name of the state of Oaxaca, an entity located in southern Mexico, where it was made for the first time.

“The process of making pasta filada cheese, originally from Italy, was brought to Mexico by Dominican friars who settled in Oaxaca,” the review concludes.

During the first hours of this Monday, when the quesillo topped the list, users managed to trend the food, flattering its properties.

There was no shortage of that Internet user who reminded the encyclopedia of flavors that Oaxaca cheese was actually named quesillo by its creators and that is how it is known in the entity. However, they recognized that in other parts of the country the term that alludes to the name of the entity, that is, Oaxaca cheese.
