The north coast of Finistère, land of corsairs where a yellow gold is hidden: the lemon. It attracts starred restaurants. “It’s not possible that ten kilometers away I have lemons, no one will believe me“, confides a cook. He is far from his favorite land: Chin, the south, Corsica… It was in Roscoff (Finistère) that the first caviar lemon appeared. “We realized that the catering industry was looking for these products“, explains the producer. In an unheated greenhouse, with a favorable climate, the lemon was able to see the light of day in the north of France.

1200 plants, several hundred kilos produced each year

And to prevent the cochineal from killing the plants, we had to call on the chickens: the saviors of these dear lemons. So for Breton restaurateurs, nothing better: fresh products right next to their homes. “It did not go to the fridge”, comments one of them. In all in this greenhouse, there are 1200 plants, several hundred kilos of lemons are produced each year. These lemons, we find them on our plates. On the menu: lemon meringue pie. “It will bring a little sweetness, a little acidity and also creaminess and smoothness.“, explains the chef. In all, in a small tartlet, there will be seven different lemons.
