  • a yolk;
  • 85g of pistachio cream;

Now let’s see what are all the steps to take to get an amazing result, without the risk of making mistakes. Let’s start!

Here’s how to make this particular chocolate salami

First of all, fill a saucepan with water and put it on the stove. Once it reaches the boil, beat the eggs with the sugar inside a bowl and place the latter on the saucepan, without touching the water. Stirring with a whisk, let them pasteurize in a water bath for about 10 minutes, over medium heat. Meanwhile, in a small pan, let’s do also melt the cold butter. Once you have obtained a rather liquid cream, add the butter that has just melted and continue to mix adding the pistachio cream and a pinch of salt.

At this point, still in a bain-marie, also melt the white chocolate and add it to the rest of the mixture. Alternatively, you can also use a microwave oven to speed things up. Once this is done, take the digestive biscuits and place them inside a clean tea towel to crumble them coarsely. Then add them to the mixture and mix them together to homogenize the ingredients. Now all you have to do is pour everything on a sheet of transparent film and closing from the outer sides.
