Keeping fit means first of all eating well. In many cases this involves some small sacrifices. That is to say give up fatty dishes and particularly seasoned. Sometimes this is even more difficult. Here’s what to cook when you have guests for dinner and you want to make a good impression, but without gaining weight. With the following recipes it will be possible to eat lightly and healthily, without sacrificing taste and substance.

Ricotta and red lentil lasagna

With this first course we will satisfy our guests by offering something truly unique and tasty, but not only. These lasagnas will also please those who intend to preserve their physical shape. To make this recipe you need the following ingredients:

125 g of red lentils;

2 tablespoons of olive oil;

3 cloves of garlic;

1 onion;

1 red pepper;

2 zucchini;

1 stalk of celery;

850 g of peeled tomatoes;

2 tablespoons of tomato paste;

1 teaspoon of oregano;

350 g of cottage cheese;

12 sheets of lasagna pasta;

60 g of grated low-fat cheese.

For the sauce:

40 g of cornmeal;

750 ml of skimmed milk;

¼ onion;

Black pepper;

½ teaspoon nutmeg.

These lasagnas can be considered a complete dish, ideal to serve as a single course. Here is the procedure to make it. First boil the lentils in boiling water for 30 minutes, then drain. Meanwhile, heat the oil in a pan, add the garlic and onion and cook for another 2 or 3 minutes. Add the pepper, courgettes, celery and cook for about 2 more minutes. Then add the lentils, tomato, concentrate, oregano and 375 ml of water. Bring to a boil, then reduce the heat and leave cook for about 30 minutes. Stir occasionally.

At this point you need to prepare the sauce. It is necessary to mix the flour with 2 tablespoons of milk and beat until the consistency is creamy. Add the remaining milk, the onion and continue cooking. When the sauce has thickened, add the pepper and nutmeg, mix everything and finally remove the onion.

At this point, add the ricotta to 125 ml of sauce. Heat the oven to 180°. You have to put 1/3 of the lentil mixture on the bottom of one non-stick pan. Cover with a layer of pastry, put another third of the lentil mixture and then spread the ricotta on top. With this procedure make another layer of dough. Put cottage cheese on top, add cheese and cook for an hour.
