  • 200 g of flour;
  • baking powder;
  • 1 teaspoon of baking soda;
  • 1 teaspoon ground cinnamon;
  • 220 g of sugar;
  • 70g of finely chopped walnuts;
  • 2 eggs;
  • 1.2 dl of seed oil;
  • 220g of grated carrots;
  • 80g of chopped pineapple in syrup;
  • 20 g of syrup;
  • 2 teaspoons of grated orange zest;
  • 15 g of butter;
  • 2 tablespoons of icing sugar.

Heat the oven to 180°. First, combine the flour, baking soda, cinnamon, baking powder and sugar in a bowl. Add the walnuts and leave a well in the center. In a medium bowl beat the eggs, the oil, the carrots, the pineapple with its syrup and the orange zest. Then pour the mixture into the flour bowl and mix well. Grease a rectangular pan with butter and pour the dough. Bake for about 70 minutes. Leave to cool completely and finally add the icing sugar.
