The chef Jesus Aguilarfrom the “Del Tigre su Leche” chain of marine bars, is the one who has proposed celebrating Tigre National Milk Day every first Sunday in February. The request for recognition of this day was submitted to the Ministry of Production on June 2021, but is still awaiting formalization.

Once he managed to write down the intensity, values ​​and flavor notes of each of these chili peppers, which are provided thanks to the La Molina Agrarian University, he decided to gradually launch all the varieties, highlighting his favorites such as Leche de Tigre Criolla, La Diablada (with encapsulated yellow rocoto), La Norteña (limo chili pepper from Chiclayo), Predador (with cherry chili pepper); and that of Pipi de Mono (piurano chili).

Besides, he decides to integrate other products into his recipes such as manzanilla, green and purple olives, as well as red, yellow and green peppers; In addition, he also created recipes with added fruits such as passion fruit, aguaymanto and tumbo.

The entire list of 40 types of leche de tigre is offered at the Barra Cevichera chain “Del Tigre Su Leche”, which has the phrase “Te Levanta” as its slogan, hence classics such as ceviche, 15 varieties of rice with shellfish (with the same paste of various chili peppers), chaufa, causas and pork rinds.
